The last time I picked the "wrong" op-amp for a circuit, I went back to Mouser looking for options and discovered that there were literally more than 10,000 package-compatible (and pin-compatible, of course) to choose from. I don't see why anyone would even try to design their own op-amp with so many choices already out there. Once I figured out which aspects were important for my circuit, I was able to find a small handful of products and try them one by one until I measured the best for the application.
But, hey, these diversions are usually good for learning a thing or two.

The flavor is a byproduct of the limitations of the fabrication process and the design limitations imposed by those. I don't know of anyone hawking the sound characteristics of a discrete op amp, yet I am sure they are out there.
