Maybe that is too involved / fumbly if you're looking for a ready
solution (OTOH, you said small number...),
but:
Maybe some of those cheapies can be opened and the springs removed?
And if the lever is not light enough for the potentiometers to hold it
in place, one could add friction, e.g. by making a disc out of felt or
similar, putting a hole in it slightly less in diameter than the
potentiometer axis, put it around the axis and glue it to the case? If
it's that accessible...
