Hi Josh
Why not go old school all the way and etch the PCBs yourself?
Its quite easy to do!

In my experience the formant is a nice system, but also nothing special.
For modules that use difficult to source parts you can just use a different
schematic with similar function.
Quite a few SDIY list members have plenty of suitable module schematics
online.

While your at it, better add in a few other non formant modules too.
You might end up with a more musical system as the original is quite
"technical" in its design.

Also please keep in mind, something complex like the formant may be less
suited as a first project!
