One problem with an op-amp per pot is that you need some sort of over 
voltage protection on the ADC or the Mux. An op-amp on power up, or 
partial power up, can do some horrid things.

And every component you add increases the chances of component failure 
in the future.

Personally, I'd go with a simple RC low pass filter from each wiper 
before the mux. Something like 470R and 10nF.
