I've just bought some I2S DACs (PT8211, they cost pennies) to hang off an STM32. Rather than mbed (which is interesting looking stuff that I haven't played with) I'm using just plain gcc-arm and libopencm3.
Some of the STM32s actually have half-way decent 12-bit DACs that are pretty fast, and could easily be multiplexed to drive separate outputs for a polysynth (digital oscillators, analogue filters - the best way to do a synth) and even if you don't have a DAC you can fake it with PWM.
You'd be surprised what you can get out of the humble atmega328, with a bit of PWM trickery ;-)
