The keyboard which I am making (not exactly a MIDI controller, but a
CV controller that can optionally generate MIDI and accept MIDI tuning) has
code for latest, lowest, and highest note priority.
Latest because that is the most common nowadays; lowest because that
is what the Ondes Martenot uses

(and that instrument is a large part of why I am building a controller
in the first place) and highest because, well, if I am adding lowest
then its basically the same code for highest so why not.

In my case, it is typically played with the right hand because the
left is doing waveform selection and articulating the envelope of each
note. However it is possible to use a foot pedal for note envelope in
which case both hands can be used (and I have seen ondists using both
hands in performance) so I decided a 12 note stack would suffice.
I'm aware that this is a pretty specialist requirement and would not
expect a general purpose MIDI controller or MIDI to CV generator to
handle that.
