To try and answer the question in the subject: I think this must be a fault.
I find it extremely difficult to believe that someone (least of all Roland) would design a unit that turns the Note CV off when it receives a Note Off. Any sound with a noticeable release is going to sound weird. Why would you do that? Roland aren't that stupid. So I'm left thinking it must be a fault.
Assuming it is, we need to try and find it:
Does it do it on all the channels?
Does it do it in all modes? (MONO, 2 VOICE, etc)
Do the Dynamics CV show the same effect (they're on the other DMUX)
