For editing, I prefer the "pass the old value" method. On Novation's kit you have to pass it on the way up. So to reduce a setting, you tweak the knob back a bit, up a little to catch the setting, then back down. It sounds awkward but it is surprisingly natural.
We are used to dealing with backlash in "real" systems. When you set the mechanical timer on your £29.99 Tesco microwave (why the hell is a microwave oven cheaper than an inkjet cartridge?!) you turn the knob past the time you want, then *back* to where you want it. You tune a guitar string by tuning *up* so it's sharp, then flattening until it is in tune.

The mod wheel is a slightly unusual case in that you usually put some on and take it off again. If you're using a synth as a controller and a sound source you'd probably have a bit of modulation on while you're recording a sequence, then leave it alone and let the sequencer apply the modulation when you're playing it back. So, you only update the modulation depth if either a CC has been received or of the mod wheel value you read from the ADC has changed since last time.
