That is again not the only way to multiplex.  So using an S&H is perhaps the 
obvious, but not the only solution (really a lot of the same arguments that 
we've already discussed for the single DAC output apply).

Today, with a multichannel audio DAC like the ADAU1966 you'll be hard-
pressed to even do the S&H for the same cost, not to speak of the same 
quality or the parts count.  Same for control voltages, just different parts 
numbers (how about a 40-channel DAC with wide bipolar output range and 
update rates in the low tens of kHz and triggered update? has 32 and 16 
channel variants avilable, too).  Just like single tube (and later single 
transistor) receiver designs the "multiplex the life out of this DAC" 
approach is becoming an interesting bit of history.
