Actually no.

The amount of discreet logic to do this would be a lot more chips than
putting a processor down to handle everything. Another thing is that if you
need to fix something or add a feature you can usually do it in software if
all the parts are hooked up right. That's a lot easier than having to add
logic, rework circuit boards and so on for a hardware solution.

But then I work with embedded computers so I have a lot of experience with
them and aren't afraid to use them.

Okay,

I've been way overthinking this idea. How much does the viability go up 
if it's 2 analog 10v p-p signal going into level control, a place to 
plug a flash card and a big red button that starts and stop recording 
directly to the card. nothing else. no dsp, no programming, just addac 
and data transfer.

Sound better?
