I believe the technical term for 'a lot of iPhones' is 'an iPad.'

I don't know how many people have been keeping up with softsynths on the iPad, but Korg have just released a megapack of really quite nice-sounding synths and drum machines of all kinds, with a basic sequencer, for less than $40.

The other thing you can do with touch-screens is design UIs that are *much* more capable and interesting than virtual knobs. There's been a lot of work done by app devs on new ways of controlling synths, from basic OSC v-knobs to strange, unusual, and original designs of all kinds. 

Knobs and wires are actually a really bad interface for a musical instrument. If they weren't traditional, no one would think twice about designing a synth with that kind of panel.
