Z80!! Why on earth would you want to do that?? There are so many nice and easy to use microcontrollers around these days. As every early microprocessor, the Z80 has no on-chip Flash ROM or other nonvolatile memory, no on-chip RAM, no on-chip peripherals like timers or serial ports. Besides that, the Z80 assembly language is a nightmare.
Re other parts: if I were you, I'd do it the other way round. First look for a project you want to build and then source the parts. For almost every project there will be some parts that you don't have, so you'll need to get some parts anyway. If some of the parts are common, get a few more than you need.
What's always handy is a set of common resistors (E12 series or perhaps E24) and capacitors.
