So - ignoring the inversion path - is there any reason why I shouldn't just use B) with R5 setting the input impedance and
R9 setting the output impedance?

As per Neil's reply- but...
Can I ask what difference the second diode (D1) makes?
If I am thinking correctly (has been known) it could be shorted out and the output would then be 1K?
