You'll be fine. Go for it.

I've done it loads of times with all sorts of uP-based stuff and it's never caused any problems. The 7805 has a great big metal tab and a 1A max current, which means that mostly it never even gets warm to the touch with the sort of stuff a synth circuit does. I've also used the little 78L05, but you have to be a bit more careful with them.
