eh you don't!
It makes debugging a bit of a pain.
If you have another MIDI interface then debug through that.
Of course the serial library on the arduino doesn't care, just start it with
Serial.begin(31250);
I've seen people use jumpers to toggle the serial speed, 38400 being the closest terminal speed.
Some Roland equipment used to something similar, to let you plug your watsit into your PC.
