If you're going to remove all those evil wirewrap and IC sockets, you're going to need access to a good desoldering station. Still, with that it shouldn't be *too* bad, and there's loads of good board-to-board 0.1" connectors you could replace them with.
Aside from that, I can't see any real snags. It looks like a good project. And I agree with Gordon; someone in many years' time will say "They only built a handful of rack units, and it was never released publicly..." before pushing the price even higher!
