afaik the toaster method requres you to use solder paste which might be hard to apply without a stencil.
I just hold the parts with curved tweezers and solder each end by hand. For SOIC packages I solder the
corner pins first, then all remaining pins.
I still use a really big chisel tip unless I need to do 0402 or (God forbid) 0201 packages
I'm in the USA and still have access to 60/40 solder. I bet lead-free would make my life miserable !

Hi Tom,
Just curious about how you go about soldering your SMD stuff? I'm really
tempted to try the toaster / hotplate method. Seems like it'd go pretty
fast..
