Just as a data reference point, back when I was working on car control for motor racing, our fastest sampling rate was set by race drivers ability to 'feather' the throttle. A well known driver was able to make sub millisecond changes to the throttle and we had to be able to respond. A few of us initially had thought this was just a bounce from the road or something, but it turned out to be true and not just in the one driver. 

Don't underestimate what a foot might be able to do.
