With two VCOs, something to have slow beating without the sound
fading out for a half a second. At minimum, a mix pot so you can
dial *partial* cancellation. Better, a way to slightly modulate
one VCO independently of the other. Perhaps a dedicated 1 Hz LFO
or band-pass-filtered noise source.
