If one wants to get the hands dirty on a classical CPU bus, starting of 
with a simple Z80 would not be too bad. There is tons of material online 
and in "classical" literature. There is tons of software support too if 
you look.

It may not be the most powerful or wonderful thing, but it will get the 
hands dirty and experiences will be gained.

If one wants CPU cores, the OpenCores is the site to go to.

Otherwise it is fun to do a replica of a traditional CPU. That is also 
something to do. I haven't done a classical CPU, but I have rolled my 
own, so I know it is possible.
