Incidentally, that's exactly what I'm using.
I use CodeBlocks as IDE:
www.codeblocks.org

As compiler for 8051 family processors I use SDCC (Small Devices C Compiler):
http://sdcc.sourceforge.net/

Both programs are free.

Probably Apple's Xcode could be used as IDE too, I haven't tried that yet. I'm happy with CodeBlocks so far.
When I met Thorsten Klose on last years synth meeting in Munich, I found that he too uses a MacBook for all his stuff. So it can't be such a bad choice ;-)

Yes, that's one of the reasons I still stick with 8051 processors. Unlike PICs and AVRs, there are many manufacturers.
