Total beginner? Minimoog? not really compatible. Have you soldered before? Or bought components? Those are the two main skills.
get a deecnt soldering station (sub $100) (Hakko) and a roll of .031 kester 245 solder. practice on some old junk boards.. Then jump right in!!!!
Good first "synth" project to get some typical kit building skills and cool sounds in the mean time:

If you've got some electronics experience and want more of a "real" synth, Analogue Solutions is selling their Red Square synth as just PCB's and a panel.. Nice design, based on Moog's Rogue. ANd the best part - NO PANEL WIRING!!!!!!!!!
