Scott Gravenhorst is building FPGA synths using Xilinx devices:

I am just starting on the design of a "single chip" (it's actually an 
FPGA plus a DAC, so 2 chips) synthesizer, but it's not a proper musical 
device, but a sound generator for an interactive art project. So I guess 
you'd not call it "Moog Complete," if that's the synth version of 
"Turing Complete" ;-)

I'm using a Spartan3AN for this to cut down on support components. I'll 
be doing the build using the Xilinx ISE WebPack, but all the Verilog 
will be written using vi, the Only True Editor ;-) </flamebait>
