If you only want 7-bit control, you can assign whichever CCs you like.
NRPNs might be worth supporting if you have a controller that sends them.
It depends on your intended use, I suppose.

It may be better to stay away from some of these.
120 and above are not actually CCs, they're Channel Mode Messages.
Most of them are rarely used now, but all-notes-off is worth handling
properly.
On a CV convertor it should turn off any gate outputs mapped to the message
channel.
