[sdiy] help interpreting diagrams with Mosfets

there are quite a few electronic diagrams which are good examples of diagrams I am seeing more and more (as I am checking out more and more Academic Papers on electronics)

they confuse the heck out of me. (mainly because I have not previously encountered diagrams with tons of Mosfets)

I am assuming they use them because they are showing how you could implement these circuits on a CHIP, but my question is


1. can these Mosfets (?) be replaced with CMOS inverters or simply JFETS ?

2. are they just symbols for amplifiers?
