Two different possible extensions of the "traditional" CV quantiser:
1. one that puts out 1/12V steps as usual, but only the steps that belong to
a particular scale.

2. one that puts out 1/X steps, so you can do even tempered 43 notes to
the octave or whater (Harry Partch)

Or of course a combination of 1 & 2.

I suppose the easiest way would be to run the CV in, digitise, & do it all 
in software..
would it be worth doing? If you are into autimatic music generation, I think 
so.
I doubt i would be a highly commercial device, though..
