The Moog etherwave theremin makes a good controller if you invert the volume antenna
(essential imho) and do a P/V conversion. I had a circuit board for this at one time,

sorry there are no boards left but there were a lot at one time, if interested probably someone
on s-diy has a PCB they'd be willing to sell...

I've found that sending the pitch to an oscillator and the volume to a VCF that can completely cut off the
oscillator works better than a VCA

I used to make a theremin-like device that operated by reflected light. If 
all you want is a way to wave your hand and get a control voltage to use 
with analog gear.

I don't think it would be practical to build  a traditional theremin into a 
modular system, though some theremins have a CV output.

Any pitch to voltage converter would allow the audio from a trasitional 
theremin to control analog gear. An MS20 would be ideal ;-D
