I think you could if the uC can drive the lines. Any reason why you
couldn't use I²C (bus) or SPI (daisy-chain) serial LCD, they are designed to
do that and tie up much less pins? If parallel is already decided than I'd
personally feel better having a bus multiplexer between the uC and each LCD.
