Here is an old trick I have seen on production lines more than once. You can parallel two matched power transformers to get very near to twice the power out. You must make sure they are in phase with each other or you will smoke both of them. If hard wiring them in parallel makes you uncomfortable you can also run them into rectifiers and parallel the output of those as your raw voltage supply.

I'm about to build ±15V psu using LM317/LM337, but there is question
about transformer. In my local shops I can get 2x15V 1A rated
transformer, but not bigger :( there is option 2x18V 2x1.1A (but it
has couple more secondaries), link:

Can I use 2x15V 1A transformer or do go with 2x18V and leave secondaries free.
