I don't know about the Minimoog in particular, but I have had students working on projects who ran into problems when they replaced a 741 with a "better" op amp; there's been situations where the low slew rate of the 741 seems to be an important part of the design, and/or the better op amp induced crazy high-frequency oscillations that were not exhibited by the 741.
