Some of what's vaguely perceived as "groove" depends on the relative 
timing of individual sounds.  The Linn LM-1 has a good reputation for 
"feel"; if you look at the ROM dumps you'll find that the snare sample
starts 10 ms late.  This can even be varied somewhat since each sound
has its own tuning control. Of course, this was probably unintentional
on Roger Linn's part...

I haven't used one but I believe the Yamaha RY20 has a bunch of 
templates for messing with this sort of thing.  

Anyone looking to seriously investigate it should do some real
measurements.  Qualitative value judgments are obviously the intended 
goal, but aren't particularly helpful or descriptive by themselves.
