I wasn't really thinking of a modular, more a favourite synth, where your
muscles know the location of the controls you want to use, and you can
pretty much tweak the sound without thinking.
A touchscreen rules out the possibility of motor learning (no stable
physical frame of reference), so how can you ever achieve any degree of
virtuosity ?
If you are sufficiently familiar with a modular, you can certainly use it
blind to some degree, just maybe not finding the patch cords. That can be
hard enough with a full visual scan.

So what can you do with a touchscreen that you couldn't do with a set of
physical controls ?
Having to continually look at your instrument in order to play it is the
mark of a novice.
