Phenolic, a k a Bakelite.
There is an ABS plastic version also, stocked by Mouser. In 1/4".
And there are clones of both phenolic and plastic, stocked by Small
Bear et al., but they are not identical to the original and they are
also 1/4".
I need them to a Serge from c:a 1984. I'm not sure, but I guess your
'79 version has the same knobs, for 1/8" shaft pots, with set screw
and (strangely) no brass insert? Looks like this (not mine) :

Yes, thanks for reminding me, Small Bear is already my emergency
solution, together with some 1/4"-to-1/8" adapters. :-)
