The only contribution I can make here is that there was at one time an 
Addendum to the MIDI 1.0 Spec published by the MIDI people. I recall there 
was discussion in it, and a flow chart of, MIDI parsing.  I don't know if 
it's sold as part of the MIDI Spec, but I have never seen this on the web 
(so far).  As far as I can remember, it contained clarifications and 
recommendations for best practices.

Anyway, I'm somewhat new to this and so far have not used call-backs. I just 
use a single CPU so it has a MIDI state machine (task) that calls various 
functions as needed. I prefer to flatten out the OS, if you will, so that I 
don't need to worry about certain tasks being interrupted by other tasks 
that access the same variables. I love RTOS's but not so much on an 
8-bitter.
