Harry,
I've got to get a shout in for my favourite dsPIC 33FJ128GP802. 28-
pin DIP 16-bit uP with on-chip 100KHz stereo audio DAC. I've used
this chip for all sorts of modulation source generation and audio
algorithms.
Alternatively, Eric's right, SPI DACs are easy to use. Recently I've
done things with the Microchip MCP4822 12-bit DACs, which are a handy
8-pin DIP, and seem to be straightforward to get running.
