There are symmetrical ones and non-symmetrical ones, depending on what 
they were designed for.  If you want to be sure which is which, look 
for the gate-to source and gate-to drain capacitances, as that is a 
pretty good indicator.  There aren't many ways to keep those two the 
same and not get a symmetrical JFET.  In any case it would be more 
notable for a general purpose silicon JFET to be asymmetrical, so if 
there is no explicit mention of that in the datasheet, I'd not be too 
concerned.
