Its a common thing to do these days - I've seen entire development
boards, or even just the critical sections, covered in a layer of
black epoxy to stop customers and competitors reverse-engineering
them. The Elka Wilgamat III that I had on the bench last year had
one board (out of about 12) completely covered in black epoxy - I
assume it was to prevent Elka's competitors finding out how that
particular board worked.
Where potting does make sense is in robust electronics (automotive,
military, aerospace, etc). Then potting does serve to protect the
electronics from the environment or mechanical stresses. But I don't
think synthesizers are in quite that category!
