If you want to stick with the 128 values provided via MIDI CC without
sacrificing range and if you have some memory left over, you could
provide a lookup table that maps MIDI CC to LFO depth (and perhaps
provide for exchanging the lookup table via sysex). If you have less
memory, the same thing (but less flexibly) can be done via a suitable
mapping function that lands on suitable musical intervals or a
combination of lookup table and mapping function.
