Weird that they don't give you at least some minimal documentation
with suggested values for the external components. I'd try emailing
them and asking if they have a User's Guide of some sort. Lacking any
of that, I'd say you'd be pretty safe with 100k linear pots for the
values you're missing. As someone else said, if something is
controlling an RC time constant (LFO rate, Envelope times), then you
should use 1M log pots.
