First observation - The website you link to says PSX, which usually refers to the *first* Playstation, not the Playstation 2.

Second observation - This is well travelled territory:

Probably easiest route is to use a PS2 to USB converter, like this and its ilk:

Concerning guitar controllers, see what the Frets on Fire people are up to:

Might want to look at all the other options to - there's all sorts of guitarish controllers out there with all sorts of interfaces.
