Justin,
The PAiA 2720 VCA (3 NPN trasistors and a 748 op amp) seems like a good 
one to play with.
It is designed for the Gnd(0V)/+9V/+18V power supply of the 2720, but 
can probably be easily adapted to a single power supply.

It's a step up from the simpler 2-transistor Korg MS20/Roland JX3P design.
