Seems to me that these problems can be solved fairly easily for both  
display updates and actual parameter updates;

1 never update the display unless a reasonable amount of time has  
passed so the display doesn't look glitchy

2 when updating actual changes to sound generation parameters, if the  
parameter changes by a large value(jumps) then increment change value  
every(reasonable number of microseconds) until the new value is  
reached - in other words portamento for parameters.
