I'd say that you should take a look at batchpcb.com's prices and product as
your main competition, at least for residents of the USA. They charge
US$2.50 per square inch for double-sided boards with soldermask and
silkscreen on both sides, plated-through holes, etc. $10 set-up fee per
order; the order can include any number of designs and boards. Turnaround
time is lengthy, however: typically 3-4 weeks.

Speaking only for myself, if a design can be made on a single-sided board,
I'd probably etch it myself or use stripboard. In other words I'd be
unlikely to take advantage of a single-sided PCB fabrication service unless
it was much cheaper than BatchPCB. Just my US$0.02 worth, of course.
