Hi!
If 8 Bit are enough then a simple circuit can be built with the AD7669 ADC/DAC - even if you don't want to use a microcontroller.
There is a simple appnote that shows how to control this part with a counter and a RAM. See page 18 of the datasheet.
Some changes and it could be used as an envelope recorder/player.
