Sampling theorem. Any bandlimited signal can be constructed as a sum of
sinusoids. As long as the ADC sampling rate is > 2x higher than the
stopband of the input lowpass filter, you can reconstruct the signal just
fine.
Granted, you do have some quantization distortion and noise, but that's at
-50dB. It's not like most analog scopes have higher accuracy than 0.5%
either :).
