Dan,
Guitar fx, which work on 9V single supplies usually, are a great place to look for gain and output stage designs. You might need to scale back some of the values though, as usually they're design to be loud and proud, unless you want some of that distortion action.
Or try a clean boost maybe: http://www.muzique.com/schem/mosfet.htm
