I teach ECE2025: Introduction to Signal Processing. It's a signal
processing class geared towards ECE sophomores (although biomedical
engineers also have to take it). We use a book called "Signal
Processing First," by McClellan, Schafer, and Yoder which is somewhat
unique in that it is written to be digestible by sophomores (vs. most
DSP texts that are written at an advanced junior or senior level.)

I was fortunate to overlap with Schafer a bit - he retired a few years
ago. Jim McClellan is just down the hall from me.
