Mixer or no mixer, you want voltage transfer. "Matching impedance" is a
holdover from telephone circuits and tube power amplifiers where you want
to maximize power transfer. It has no place in normal audio circuits.
Certainly not in a mixer. Some mixers have selectable input impedance for
mic preamps, but that's just to change the frequency response of certain
not so ideally designed microphones.
