That article pretty much covers what we're talking about here. Gain and
level-shifting circuits are discussed, as are overvoltage protection
circuits (at the very end). Looks like the author recommends the strategy of
running the op-amp from the same +5V supply as the ADC, but there's also a
clever little circuit that uses a single Schottky diode to protect against
negative input voltages and splits the input current-limiting resistor in
two as someone else suggested today. There's more info and technical
considerations here than are likely to be relevant to simple CV-processing
applications, I suspect.
