What is the sample rate?  The signal is obviously going to be quantized in time as well...

Any kind of sample and hold or latch on the DAC's output would be to remove glitches that occur during sample to sample transitions.  A step is what you want, a glitch would be a spike or something superimposed, which you may not be able to hear when driving a VCO.  You should probably be checking this with an oscilloscope.
